Ingredients
- Orange roughy
- Flour
- 2-4 tablespoons butter
- Salt
- Lemon pepper
- Tartar sauce

Directions
Cut orange roughy into approximately 2x4" pieces. Flour, let rest, flour again. Melt butter in skillet and add fish. Sprinkle generously with lemon pepper and dash salt. Fry till both sides are nice and brown. Serve with tartar sauce.

Notes
I added boiled new potatoes and sauteed zucchini and squash. Was a great, fast meal.
