Leek and Potato Pork Roast with White Wine

Ingredients

  • 3-4 potatoes - cubed
  • Small bag carrots - small precut
  • 1/2 bottle white wine
  • 1 package leek and potato soup mix
  • 2-3 cloves garlic
  • Small package mushrooms - sliced
  • Salt and pepper, to taste
  • Small bone-in pork roast

Directions

Place cubed potatoes and carrots in slow cooker, pour 1 cup of wine, add garlic, salt and pepper to taste. Place pork roast (fat side up) on top of potatoes and carrots. Pour some wine over the roast. In a small bowl, pour soup mix, add the garlic and white wine - just enough to make a watery paste and pour or spoon over pork roast, add salt and pepper to taste. Add mushrooms 15-20 minutes before serving.

Notes

Cooking times for each slow cooker can be different - I put mine on 8-hour setting, but the meat is done in 6 hours. Sometimes the potatoes, if cut too large, will take longer; therefore, depending on the size of the roast, you can microwave it for 5 minutes before putting in the slow cooker. At the bottom of the cooker is a nice au jus to spoon over roast when serving. Any other vegetables such as red peppers can make a great addition to the meal.
