First, peel the eggplant, put in a pan of water and bring to a boil. Boil until eggplant is soft, then pour out the water and mash the eggplant. Add a dash of salt and pepper, egg, saltine crackers, shredded cheese and butter. Pour the mixture into a pan and bake at 350 for 45 minutes to an hour. Remove from oven and add the sliced cheese on top.
