At home, seal up the first six ingredients in a zipper-top bag. Once on the road, brown the chicken in hot oil in a big skillet, add the onions and then stir in the rice marinade mixture. Reduce heat and add the undrained pineapple, the drained mushrooms, orange juice and water. Cover and simmer over low heat until the chicken and rice are tender. Serves six.
Complete the menu with buttery cornbread, slices of chilled tomato aspic on beds of buttercrunch lettuce and icy spring water. For dessert, jog to the campground store for popsicles to slurp as you stroll back to your campsite.

This fruity, filling, one-pot meal is ideal for your first night on the road. Use a skillet with a nonstick lining, and it will swish clean in hot water with a wipe of a paper towel.
