Boil noodles per package instructions. Once noodles begin to boil, add the bouillon and mushrooms. Do not drain or rinse the noodles! In large casserole dish, layer the noodle/mushroom mix, then cheddar cheese, then noodles, then Monterrey Jack cheese. Top layer should be a mix of the two cheeses. Put in 400 degree oven for about 15 minutes (or until the cheese is melted on top). Great-tasting meatless casserole! Can be reheated in microwave.
