Roadworthy Recipes

Community Bean Stew

Prep/Cook Time: 3+ hours
Prep Method: Range Top
Oven Temp: Low

Ingredients

  • 1 package (1 pound) mixed beans with spice packet
  • 1 can stewed tomatoes
  • Celery
  • Onion
  • Chopped-up hamburger or smoked pork chops or both
  • Chili powder
  • Garlic
  • Chopped cabbage
  • Chopped green onion
  • 1 can tomato soup
  • Rice
  • Oats
  • Barley
  • Corn
  • Tomato sauce
  • 1 slice bacon, chopped
  • 1 or 2 hot peppers, or hot salsa
  • Parsley
  • Salt and pepper, to taste
  • Any other ingredient that sounds good

Directions

In a large pot (think gallons), cook package of mixed beans with spice packet. Cook until about one hour left. Add can of stewed tomatoes, celery, onion, chopped-up hamburger or smoked pork chops or both. Add other suggested ingredients - or whatever sounds good to you - chili powder, garlic, chopped cabbage, chopped green onions, can of tomato soup, rice, oats, barley, corn, tomato sauce, hot peppers or hot salsa, bacon. Add salt and pepper to taste, and garnish with parsley!

Notes

Serve in deep bowls with bread and butter. Make sure it's watery and stirred up well. It will be gone in a few minutes when served to hungry hoboes or bean-stew lovers like me. Sounds awful, but it's really good ... and good for you ... and cheap! Just don't go overboard on any one ingredient.
