Breakfast in a Bag

Ingredients

  • Diced cooked ham
  • Cooked bacon pieces
  • Crumbled cooked sausage
  • Chopped onion
  • Diced peppers and tomatoes
  • Sliced mushrooms
  • Grated cheese
  • Eggs
  • Anything else you like

Directions

Hostess breaks two or three eggs into a plastic resealable bag. Guests break them up by squeezing the bag, then add whatever ingredients they like in an omelet and again mix together by squeezing the bag. Then squeeze as much air as possible out of the bag and seal it shut. Have a big pot of boiling water ready, and drop bags into water and boil for 12 minutes (15 minutes for three eggs). Be sure to keep the water boiling. Don't put too many bags in at once to aid in timing. Use a felt-tip pen to mark on bag when omelet will be done, e.g., 10:53, 11:04, etc. Be sure to put the person's name on the bag also. Remove from water, unseal and slide a perfect omelet onto plate. Have salt and pepper, salsa or other condiments ready to put on omelet.

Notes

This is nice served with fruit and breakfast rolls or coffee cake and coffee, juice, etc. For a breakfast get-together, write the invitations on a brown paper sandwich bag and write "Please come for Breakfast in a Bag at -- time and place, etc." This can be done outside on the grill or on the stove. Great for a group of campers.
