Roadworthy Recipes

Roy-Boy Breakfast

Ingredients

  • 3-4 medium potatoes
  • 1 stick butter or margarine
  • 1 dozen eggs
  • 1 16-oz. package smoked sausage

Directions

Wash and thinly slice potatoes. In a large cast iron skillet, melt butter. Add potatoes and season with salt and pepper to taste. When potatoes are almost tender, cut smoked sausage into bite-sized pieces and add to potatoes. Fry until potatoes are tender. Add eggs. Stir occasionally until eggs are thoroughly cooked. Serve hot.

Notes

This is a recipe we have used with our Boy Scout troop for years. Our boys ask for it every time we go camping. Very easy cleanup afterward, also.
