Roadworthy Recipes

Meal in a Skillet

Ingredients

  • 1 to 2 pounds ground beef
  • 1 can undrained whole kernel corn
  • 1 can ranch-style beans
  • 1 onion, sliced
  • 2 to 3 potatoes, sliced in round slices
  • 1 can stewed tomatoes
  • 1 to 2 packages cornbread mix
  • Salt and pepper to taste

Directions

In cast iron skillet, brown and season ground beef. Layer potatoes on top of ground meat. Place a layer of sliced onions on top of potatoes. Pour in undrained corn and spread over potatoes. Pour in undrained beans. May want to season lightly after each layer, being careful not to get too salty. Pour tomatoes over the top as the last layer. Cook on stove top or in oven until potatoes are tender. At this point, you may prepare your cornbread mix and pour over the top and bake in the oven until cornbread is done or prepare and bake the cornbread separately. Serves about 4-6 people.
