Pineapple Upside Down Cake

Prep/Cook Time: 30 minutes
Prep Method: Coals or Fire Pit

Ingredients

  • 1 can pineapple rings
  • 1 small can crushed pineapple in syrup
  • 1 9-oz. box yellow cake mix
  • 1/3 cup brown sugar
  • 1/2 stick margarine
  • 20 hot coals (small or medium) from fire
  • Cast-iron kettle with lid

Directions

Heat margarine in cast-iron kettle until melted. Add brown sugar and dissolve. Add small can of crushed pineapple with juice. Mix well. Set cast-iron kettle on part of coals. Place pineapple rings in bottom of kettle. Mix cake mix per instructions. Pour on top of the pineapple/brown sugar mix. Place lid on top and place remaining coals on top of the lid. Let cook for 30 minutes. Make sure coals remain hot; add new ones if needed. After 30 minutes, remove coals from lid and remove lid. The cake should be cooked. Spoon out and enjoy. What is camping without campfire food?!!
